Hi…..and welcome to my site - www.cakefare.com. I’m Gail . I have always enjoyed cooking having started at a very young age! My mother had us helping with the cooking from an early age. She would give cooking instructions to follow, while she was busy doing other things, starting with a fruit sponge if I remember rightly. I was cooking dinners from about 9 years old.
At 12 I began the weekly ritual, baking enough biscuits to fill the tins for a weeks worth of lunches and a few extras. I reeeeaaaalllly hated the washing up that had to be done afterward. There were no dishwashers in those days!
Over the years I have done a LOT of baking. For some reason I prefer baking and have always enjoyed making cakes. I don’t make them so often now unless I am answering the New Zealand traditional request to “bring a plate” to a gathering. Many new immigrants have arrived with an empty plate at this strange request……not realizing it is required to have something tasty on it to be shared! My friends all know that I will provide a cake or dessert for a Pot Luck shared meal as it gives me an opportunity to do some of the baking I so enjoy.
Sharing my favorite and popular recipes with others has inspired me to create this site. So often I am asked for a recipe.
I am surprised how many people insist they can't bake. I suggest if this is you, you should start with a few easy recipes. After a few successes, those who say they “ can’t bake cakes” will be encouraged to go on and try more complicated recipes. It is really just a case of using correct measurements for the ingredients, and following some simple tips.
Experience helps you know how things should look and how to fix them before the cake goes in the oven. I will share tips and alternative suggestions for a recipe and encourage you all to keep trying. We all have the odd failure……but “if at first you don’t succeed, try, try and try again. “ The family will be sure to want to taste test your efforts!
Baking cakes is very therapeutic and rewarding. It is also a wonderful gift of love. So let’s get baking, fill the kitchen with those delicious smells and create some cakes to share with family and friends. Cakes baked from scratch are just so much tastier than packet cakes (sorry Betty Crocker) So print off a recipe and give it a go. Come and enjoy your cooking adventure with me.

I made these cupcakes for the wedding of some friends.They were flavoured Red Velvet and Plain Vanilla. It was great fun decorating them. A sprinkle of edible sparkle and some strategically placed " dragees" - the little coloured pearl balls, gave them an elegant finish.
