Pumpkin and Date Cake
"Delicious with Coffee "

I just had to make this Pumpkin and Date Cake when I saw the recipe in our local newspaper courtesy of Angela Casley. Anything pumpkin is always appealing and the golden inside studded with dates and orange rind looked really tempting! Butternut pumpkins are plentiful and cheap at the moment, so we have been enjoying them in many guises. But any kind of pumpkin will work equally well.
This is perhaps a new way to get your children to eat pumpkin! With oranges, and only a small quantity of brown sugar this is a relatively "healthy" cake as cakes go.
Because it is not too sweet it goes well for morning and afternoon teas with a freshly brewed cup of coffee or your favourite leaf tea. Serve it warm.....it is really yummy with a big dollop of thick creamy Greek Yoghurt.

Ingredients
1 cup dates, roughly chopped
Zest and juice of one large or 2 small oranges 250 grams softened butter 1/2 cup light brown sugar 1 teaspoon vanilla essence 3 eggs 1 cup of mashed pumpkin 2 cups of self raising flour 1/2 cup of milk Method
1) Preheat oven to 175oC ( just under 350oF)
2) Soak the chopped dates and orange rind in the orange juice for 15 minutes juice 3) Cream the softened butter,sugar and vanilla until light and fluffy. 4) Add the eggs one at a time, beating well after you add each egg 5) Add the date and orange mix and stir in well 6) Add the mashed pumpkin, flour and milk and mix until combined into a smooth, slightly runny mixture 7) Pour into prepared 23cm (9 inch) springform cake pan 8) Bake for 50 minutes or until the skewer comes out clean 9) Cool for 10 minutes before turning out of the cake pan 10) Dust with icing sugar ( confectioners ) and serve warm or cold with Greek Yoghurt |
