Your family and friends will love this Spiced Banana Bread. It is so easy to whip up and great for lunchboxes and picnics, as well as having on hand to go with a cup of coffee or tea and for childrens snacks. It is a loaf you could take for cake stalls, or for morning or afternoon teas. I have been using up excess bananas off our own banana trees and liked this recipe because it uses quite a lot of fresh banana, yet doesn't have too strong a banana flavour. Whilst the walnuts are optional, they really add to the flavour.

Ingredients
½ cup ( 4 ozs) unsalted butter
½ cup brown sugar, packed firmly 1 teaspoon vanilla essence 1 teaspoon ground cinnamon 1 teaspoon ground nutmeg 1 teaspoon baking soda 1 teaspoon of baking powder pinch of salt 1 ½ cups of ripe mashed bananas – approximately 3-4 large bananas 1 heaped tablespoon of jam or jelly – I used quince jelly, but apricot, orange marmalade or other flavoured jellies would work 1 tablespoon honey 2 large eggs 2 ¼ cups All Purpose Flour ½ cup of chopped walnuts (optional) Method
1) Preheat oven to 170oC (325oF)
2) Line a 25x15x8cm loaf pan with baking paper 3) Combine the softened butter, sugar, vanilla essence, spices, baking soda, baking powder and salt and beat until smooth 4) Add the mashed bananas, jam, honey and eggs and continue to beat until smooth 5) Add the flour and walnuts and mix in until all the ingredients are mixed right through. While being careful not to over mix be sure the nuts don’t have a dry flour coating 6) Pour the mixture into the prepared loaf pan and spread evenly, smoothing the top 7) Bake in the middle of the oven for an hour, covering the top with tinfoil to prevent burning after ¾ hour or when the top is nicely browned 8) Test with a skewer – you may need to bake for a further 10 – 15 minutes 9) Cool in the pan for 5 minutes before removing and cooling on a wire rack Slice and enjoy spread with butter or plain. This loaf keeps for several days in an airtight container and is truly delicious! |
