This family favourite fruit cake recipe has been given out to friends far and wide, it is so popular.With no butter, sugar or eggs and wholemeal flour it is about as healthy as a cake can get! It is easy to prepare being a boiled fruit cake, and the orange gives a nice flavour along with the raisins.If you want a change, you can replace half a cup of raisins with chopped apricots or prunes. You can leave out the walnuts and if you get caught short, it still works with plain white flour.
This is a lovely cake for lunch boxes or picnics. I often make it if we are going camping as it is good to take if you are going on hikes, or kayaking. My favourite fruit cake never fails to draw plenty of comment if I take it to a gathering. One friend ices it with a cream cheese icing and another makes it for her Christmas Cake.
I have also made it with rice flour for a friend who has a gluten free diet, so it is a versatile recipe and can be adapted easily. Enjoy ... it could become one of your standby fruit cake recipes!

No butter, sugar or eggs Fruit Cake
"Fresh from the oven and cooling before taking on a picnic with friends"
Ingredients
2 cups raisins
1cup dates, stoned and chopped – or vary with half prunes or apricots 2 teaspoons vanilla essence 2 teaspoons cinnamon 1 teaspoon nutmeg 2 cups water ½ cup oil – use a light flavoured oil like canola or bran oil 1 whole large orange, chopped in food processor 2 ¼ cups wholemeal flour or half white half wholemeal 1 teaspoon baking powder 2 teaspoons baking soda ½ cup chopped walnuts ( optional) Method
1) Preheat oven to 160oC or 325oF
2) Place all dried fruit, orange, vanilla, spices, water and oil in a large saucepan and bring to the boil. Simmer for approximately 10-15 minutes. Cool. 3) Grease and line base of a 20 centimeter square cake tine or line with baking paper. 4) Mix the dried ingredients – flour, baking powder, baking soda and nuts before adding to the cooled fruit mixture. Stir well to ensure all flour at the bottom is mixed in. 5) Pour into baking tin and smooth the top. 6) Bake at 160oC for 45 – 60 minutes. Test with skewer. 7) Cool in the cake tin and store in airtight container. Icing
A cream cheese icing either plain or flavoured with orange rind and juice makes this into a truly decadent treat.Extra special decorated with dried apricots, pumpkin seeds and/or walnuts.
