Seriously Good Banana and Walnut Cake

Seriously Good Banana and Walnut Cake is a wonderful way to use up those over ripe bananas....but you may want to buy bananas specially to make this yummy cake when you are a wanting to bake a delicious cake for your guests and family. A great choice for a birthday or special occasion cake, as it makes a large cake with two cakes sandwiched together.
Ingredients
2 cups flour
1 teaspoon baking powder pinch of salt 125grams unsalted butter ¾ cup caster sugar 2 eggs 3 cups mashed banana 1 teaspoon baking soda 4 tablespoons hot milk 1 cup walnuts About 75 grams mascarpone or ¼ cup Method
1) Preheat oven to 160C
2) Prepare two 23cm cake pans with baking paper or grease and flour the tins. 3) Beat the softened butter on a low speed until light and creamy 4) Slowly add sugar and continue beating on low speed until light and fluffy 5) Add eggs one at a time, mixing between each 6) With mixer on low speed add the banana….be sure to scrape sides of bowl with a spatula regularly 7) Dissolve the milk in the hot milk 8) Alternating, add the sifted flour, baking powder and salt and milk mix in three equal quantities 9) Fold in the walnuts 10) Divide the mixture equally and pour into the prepared cake pans 11) Bake for 20 – 25 minutes or until the skewer comes out clean 12) Cool cakes in the cake pans, then turn out 13) Turn one cake upside down and spread the mascarpone over the top( actually the bottom of the cake) Should be a thick layer 14) Sandwich the second cake on top and ice with the cream cheese icing Cream Cheese Icing

125 grams unsalted butter
500 grams cream cheese 1 cup icing sugar Grated rind of one lemon (optional) Method
1) Cream butter on high speed, continuously scraping the sides of the bowl with the spatula
2) Soften cream cheese and add to the butter, continue beating until there are no lumps 3) Add the lemon rind and mix through |
