Christmas Meringues
"Delicious, Christmas Mince Filled, Gluten Free Treats "

It seems meringues are making a big comeback in London at least. They are always popular for those with a sweet tooth and are a great standby to keep in an airtight container for unexpected guests.
They are gluten free as there is no flour, so a wonderful dessert to serve those who have a gluten intolerance.
We tend to think of meringues as plain but you can flavour them with different things - these have Christmas mince( see my recipe for homemade mince but bought is fine) . The trick is not to mix it in too much. Just enough to be through all the egg white.
You can have chocolate and almonds or dried cranberries and almonds and I have had some with chopped up ginger which were delicious.
Served with a bowl of whipped cream which can also be flavoured with a a touch of your favourite liquer for a truly decadent treat, you can expect lots of compliments when you serve these to your friends and family.

Ingredients
4 egg whites ( room temperature)
1/2 teaspoon cream of tartar 250grams caster sugar 1 teaspoon lemon juice 125grams Christmas Mince Method
1) Preheat oven to 150oC
2) Line two baking trays with baking paper 3) Use either stainless steel or china bowl rather than plastic and beat egg whites until frothy 4) Add cream of tarter and beat until stiff 5) Whisk in the sugar a tablespoon at a time 6) Whisk in the lemon juice 7) Sprinkle the Christmas Mince over the mixture and carefully fold through – do not mix – you just want it throughout the mixture 8) Drop spoonfuls onto the baking paper – keep them quite high – I use a dessertspoon heaped – but if you want bigger or smaller meringues use a different sized spoon 9) Put into the oven and immediately lower the temperature to 130oC 10) Bake for 45 minutes 11) Turn off the oven but leave the meringues in the oven with the door slightly open until the meringues are totally cold. 12) They need careful handling – store in an airtight container with grease proof paper between the layers 13) Serve with whipped cream – which could have a suitable liquer through it for a special Christmas treat |
