Cote d’Ivoire or The Ivory Coast and Ghana are the biggest producers with 70% of the world’s cocoa beans coming from West Africa. Brazil, Ecuador, Indonesia, New Guinea and other South American countries produce the balance.
What Makes a Good Chocolate Cake
There are dozens of chocolate cake recipes to choose from. You will find there can be quite a difference in texture – some will be light and soft, others rich and dense. Others are very moist.
Much of this comes down to the process for mixing your cake batter… and of course the ingredients used. The amount of butter, number of eggs, quantity of milk or water, sugar, and dry ingredients all play a part. How hot your oven is, the size of your cake pan and length of baking time will also affect your cake.

Choose icing sprinkled with chopped walnuts or coconut or for a decadent topping ganache. Ganache is rich enough to serve as is, maybe decorated with a flower, or chocolate scrolls. For a no fuss but delectable alternative to dessert serve a moist, freshly baked chocolate cake with fresh berries and a dollop of cream.
