Hummingbird Cake
"Bananas and Pineapple for a tropical flavour!"

Humming Bird cake is a great starter for inexperienced bakers. Give the kids the recipe to try. It is a deliciously moist , substantial cake. Not only is it quick to prepare, but if you make a double layered cake by dividing the mixture and cooking in two baking pans, you can cut the cooking time back to 20 - 25 minutes. Make the icing in the kitchen whizz if you have one, for more time savings... and you can be eating this cake within an hour .
I used up the last of the bananas off our own tree. Many people don't realise we can grow the finger bananas in Auckland. We must have the perfect spot.... as our trees fruit regularly. But any bananas work well so long as they are well ripened.

Ingredients
3 cups plain flour
1 teaspoon salt 1 teaspoon cinnamon 1 ½ small cups of oil (canola or similar) 250 gram can of crushed pineapple( undrained) 2 small cups sugar 1 teaspoon baking soda 3 beaten eggs 1 ½ teaspoons of vanilla essence 2 cups very rip bananas chopped Method
3) Add beaten eggs and oil and stir until combined.
4) Chop the banana into small pieces - note 2 cups
5) Add crushed pineapple, chopped banana and vanilla essence
5) Combine well
6) Line a 25cm tin with baking paper - or two for double layer cake
7) Pour mixture into the prepared baking tin.
8) Bake cake for 25-30 minutes or until skewer comes out clean.
9) Cool in tin for 10 minutes 10) Turn out onto wire rack
11) Ice with cream cheese icing when completely cold - you can see I iced this at night! 12) If doing two layers carefully place the second cake on the bottom layer iced with half the icing.
13) Ice the top layer with the remaining icing Method
1) Preheat oven to 180oC (350oF)
2) Combine all dry ingredients in a large bowl. 3) Add beaten eggs and oil and stir until combined. 4) Add crushed pineapple, chopped banana and vanilla essence 5) Combine well 6) Line a 25cm tin with baking paper. 7) Pour mixture into the prepared baking tin. 8) Bake cake for 25-30 minutes or until skewer comes out clean. 9) Cool in tin for 10 minutes 10) Turn out onto wire rack 11) Ice with cream cheese icing when completely cold NOTE FOR DOUBLE LAYER CAKE 1) Prepare two tins the same size 2) Halve the mixture and pour into each tin 3) Bake for 20 - 25 minutes 4) When completely cold ice - turn one cake upside down and ice with half the cream cheese icing spreading right to the edges 5) Carefully place the second cake right side up on top. 30grams icing sugar
25 grams butter (softened) 125 gram packet cream cheese (room temperature) 1 teaspoon vanilla essence 1) Sift the icing sugar to get out the lumps. 2) Beat the butter and cream cheese until smooth. 3) Add the icing sugar and beat ingredients. Add milk if too dry. 4) Add vanilla essence and other flavourings and mix in. 5) Decorate with pineapple pieces or other fruit (optional) |

Alternative Serving Suggestions
Hummingbird Cake is moist and very nice as is. However - this cake is even more delicious with a cream cheese icing, either plain vanilla or flavoured with grated lemon rind or passionfruit, to add to the tropical flavours.
For a very special cake you may want to divide the mixture into two and bake in two tins, sandwiching together with the icing and passionfruit as well as on the top. You will need to adjust the baking time as it will take less time to cook. Test after 20 minutes.
