This is a simple Lemon Icing Recipe that you can use on a variety of cakes. Getting the right consistency is probably the most important thing when you are mixing. Always go slowly in adding the liquids as it doesn't take a lot to make it too sloppy. Just keep adding a few drops of lemon juice, mix, repeat... until your lemon icing has an easy spreading consistency!
Ingredients
NOTE: Icing Sugar is also called Confectioner's Sugar or Powdered Sugar
1 1/2 cups (230grams) ( 7 1/4 oz) of icing sugar (This makes enough to coat the sides of the cake) OR 1 cup (150 grams) (4 3/4 oz) if you just wish to cover the top of the cake 125grams (1 oz) butter - you can use a little less, but may need a little more lemon juice Grated rind of one lemon Juice of 1/2 a lemon Method
