Feijoas are a delicious, delicately fragrant flavoured fruit, that originate from South America and are very popular in New Zealand. In season from early April for 2 months, many people have bucket loads of fruit from their trees. This Feijoa Cake recipe is a lovely way to use some of those fruit. As feijoas freeze well, you can enjoy this recipe any time of year.
Serve this recipe as a cake or dessert. Delicious any time of day it is not too sweet, with the tangy fruit.

Ingredients
300 grams (2 1/2cups) plain flour
3 teaspoons baking powder 11/2 teaspoons cinnamon 1/2 teaspoon salt 250 grams demerara sugar (or brown sugar) 50 grams( 1/2 cup) raisins 125 grams (4 ozs) butter - melted 2 large eggs - lightly beaten 175 mls (3/4 cup) milk 250 grams (1 cup chopped fruit) Feijoas - scoop out fruit and chop into smallish pieces Method
1) Preheat oven to 180oC (350oF)
2) Prepare a 20cm (8 inch) square cake pan 3) Sift flour, baking powder, cinnamon and salt into a bowl 4) Stir in the sugar and raisins 5) Mix in the butter, eggs, milk and feijoas and beat until smooth 6) Pour the batter into the prepared cake pan and spread evenly 7) Bake for 35 - 45 minutes in the middle of your oven. Cooked when the cake springs back when lightly pressed. Or test with a skewer which will come out clean when cooked. 8) Leave in pan for 20 minutes then turn onto a wire rack to cool. 9) Cut into square and serve warm 10) Put a dollop of cream or Greek yoghurt on top of the cake and garnish with extra fresh feijoas |
