Fresh Plum Cake

This Fresh Plum Cake Recipe makes a lovely tangy, refreshing cake. It is very light with a distinctive orange and plum flavour. It has no butter, using oil, instead which makes for a moist cake, while the addition of plain yoghurt also adds to creating a lovely moist light cake. With almond meal this is a good cake to feed your children for some fruit and healthier cake ingredients.
I got this recipe off Joy of Baking when I was looking to use some plums which are in season here in New Zealand, and was delighted with the result. I cut the sugar quantity by a quarter. I find many recipes use far more sugar than is , so always reduce the sugar quantity.
You could serve Fresh Plum Cake as a dessert as well as a wonderful accompaniment with coffee.

Ingredients
1 ¼ cups (175 grams) plain white flour
¼ cup( 30 grams) ground almonds 2 teaspoons baking powder ¼ teaspoon salt ½ cup flavourless oil (canola, bran, safflower etc) ½ cup whole milk plain yoghurt ¼ cup (60mls) orange juice 1 tablespoon orange zest (rind – take care not to use the white pith) 1 large egg 1 teaspoon vanilla extract 3/4 cup (150 grams) white sugar 1-8 plums – light or dark red – preferably freestone 2 tablespoons brown sugar – demerara or other course granules Method
1) Preheat oven to 200oC (400oF)
2) Prepare a 20cm ( 8 inch) Springform Cake Pan 3) Stir together the flour, ground almonds, baking powder and salt 4) In another bowl whisk together the oil, yoghurt, orange juice, orange zest, egg and vanilla essence. 5) Stir in the sugar. 6) Add this wet mixture to the dry in gradients and stir until well combined 7) Pour the mixture into the prepared cake pan and spread evenly 8) Arrange the halved. plums ( stones removed) flesh side up on top of the mixture. Push the plums down into the mixture a bit. 9) Sprinkle with the brown sugar 10) Bake in the middle of your preheated oven for 35 – 45 minutes or until a skewer comes out cleanly. 11) Cool before removing from the cake pan |
